Antonia Lofaso

The food of chef Antonia invites customers to dive into the deep. It is her food that evokes curiosity, which developed as she moved out of the Long Island suburbs and entered the culturally diverse scene that is Los Angeles. Cavatellis and carnitas coexisting on the same menu is her ideology. What remains, however, with her food is an unifying view of the future, while also reminiscing about the previous. Scopa Italian Roots is a restaurant founded by Lofaso in 2013. The restaurant was opened by her as a result of her American-born Italian heritage. The interpretation that Lofaso has given to traditional Italian is widely praised for being among the most compelling restaurants for Italian cooking within Los Angeles. The customers have described Scopa as an essential neighbourhood staple, where Lofaso always provides food that is genuine and incredibly satisfying. Lofaso had been an apprentice to culinary masters taking their tips as well as taking risks. She was not afraid in doing so, merely following her intuition. After a brief period she rose to the very top at Wolfgang Puck's Spago. Then she collaborated with a variety of famous people as she transformed various Los Angeles restaurants. Lofaso joined forces with Sal Aurora to create Black Market Liquor Bar, an upscale bar located in Studio City. With Black Market and the business alliances she created, Lofaso was able to find a place to call home. Lofaso would find the freedom to express her creativity that she desired through this collaboration. Black Market is not constrained by one definitive direction and that's the goal. The book also talks about the struggles she faced while raising Xea and pursuing her studies in The French Culinary Institute. Lofaso insists that the source of inspiration behind all of Lofaso's achievements is her kitchen. It's through this vein she keeps a steady finger in the pulse. Chefletics the brand she has created that is changing the way chefs dress. It is a blend of style and practicality. Lofaso wants to be true to the vision of her clients.
